Chocolate and Nut Swirls

Ingredients:
- 115g soya margarine
- 115g low fat cream cheese (Philadelphia Ultra Light or Quark are good options)
- 120 ml low fat sour cream or low fat crème fraiche
- 250g stoneground wholemeal flour
- 1 beaten egg to glaze
For the filling:
- 1-2 tbsp agave nectar
- 2 tsp cinnamon
- 4 tbsp chopped organic raisins
- 4 tbsp chopped dried apricots (Use organic, traditionally dried apricots as they have not been treated with sulphur dioxide. Their colour is darker than the normal dried apricots, and their taste is so much better!)
- 75g chopped pecan nuts
- 75g chopped organic dark chocolate
Method:
- Process the butter, cream cheese, and sour cream/crème fraiche in a food processor until just combined. Add the flour and process a little more to just combine the mixture. Be careful not to over mix, as it makes the dough too chewy! Put the dough into cling film and cool in the fridge for about 6 hours. (I often make the dough in the evening and leave in the fridge overnight!)
- When you are ready to make the swirls, pre-heat the oven to 180° and line two baking trays with lightly greased parchment paper.
- Now make the filling by putting all ingredients in a bowl and mix until thoroughly combined.
- To make the swirls it is important to keep the dough as cold as possible so I make them in little batches, only taking part of the dough out and leaving the rest in the fridge until I am ready to make the next batch. The dough is quite sticky so you need quite a bit of flour to roll it out to a circle, as thinly as you can. Cut the circle into six wedges and sprinkle with some of the filling. Be careful not to put too much filling on as it makes it very difficult to roll the wedges. You need to roll each wedge, starting at the wider end, then shape it into a crescent. If the dough is too crumbly, leave it as it is and bend only slightly.
- When you have made all your swirls, brush them with a beaten egg and bake in the oven for about 15-20 minutes, until golden brown.
- Take them out of the oven and leave to cool.
