Apple Strudel

• Ready made organic filo pastry (no added sugar)
For the filling:
• 100g wholemeal bread crumbs (just put a few slices of wholemeal bread into the food processor)
• 5 tbsp light olive oil
• 1 kilo of apples
• 2 tbsp agave nectar
• 3 tbsp honey
• 2 tsp cinnamon
• 50g organic raisins or sultanas
To brush:
• soya margarine to brush
Method:
1. Pre-heat the oven to 180°. Line a baking tray with lightly greased parchment paper.
2. Peel the apples and slice thinly.
3. Roll out the filo pastry until very thin and rectangular in shape.
4. Heat the oil very gently in a pan and add the bread crumbs, keep stirring until light brown, then add the honey. Leave to cool before adding the apples, raisins, cinnamon and agave nectar.
5. Spread the filling over two thirds of the pastry and start rolling into a strudel leaving the end without the filling until last and use this to cover and fold over the strudel.
6. Brush with melted soya margarine and bake in the oven for about 30-40 minutes.
7. Leave to cool.
