Austrian Apple Cake

Ingredients:
- 300g spelt flour
- 1 tsp baking powder
- 1 tsp cinnamon
- 2 tbsp agave nectar
- 300g soya margarine
- 4 yolks of organic free range eggs
- 200g blanched almonds (roasted and ground)
For the filling:
- 1 kilo of apples (peeled and cut into little pieces)
- 2-3 tbsp molasses or maple syrup (depending on how sweet or sour the apples are)
- 2 tsp cinnamon
- 1 egg white to brush the cake
Method:
- Peel the apples, cut into little pieces, add 250ml of water, the molasses or maple syrup and cook the apples for about 10 minutes or until soft, then leave to cool for a bit.
- Pre-heat the oven to 180°.
- Line an 18cm / 6’’ square or round baking tin with lightly greased parchment paper.
- By hand or in a food processor mix all the ingredients quickly to a smooth dough. Be careful not to over-mix. Lightly press ¾ of the dough into the tin and cover with the apple mixture.
- On a floured surface roll the remaining dough into long spaghetti like strips of about 2cm thickness. Alternatively you can roll out the dough and cut strips. Lay half of the strips diagonally across the cake and the other half on a 90° angle to make a criss-cross lattice.
- Brush the lattice with the egg white, then put it in the oven and bake for about 45 minutes at 180° (until light brown).
- Take the cake out of the oven and leave to cool before cutting it.
